One of my projects this summer will be to come up with some sort of recipe book for Matt. He’ll have an apartment this fall at UNL and he’ll be cooking.
He’ll be a great cook, but it IS a shock when you have to cook AND figure out how to live off campus, transport yourself, get groceries, cook it, eat it, study, work out, etc.etc.
It’s the never-ending Hamster Wheel Of Life.
He love waffles and pancakes. I COULD make him some and freeze, but they never taste as good.
If he has a waffle iron and a pan, he can make a quick batch of pancakes or waffles and be on his way with a full tummy.
(Matt, I’m sorry I said that, but you’ll ALWAYS be my little boy!)
We are now on the hunt for a good waffle recipe. I tried two kinds these last days…one WITH yeast and one WITHOUT. Both were good.
Yeast one has to be prepared the night before, and that might be harder than it needs to be for a bachelor student.
One blog I love, Orangette, had a post about waffles. I made both recipes.
They were good. I could mix this recipe up in bulk and bag it. I’ll have to experiment with how much dry ingredients to how much liquid.
I’m going to keep looking. I have a willing tester/eater…..I want the waffles to be CRISPER.
Any secrets?







Look for Batter Blaster in the section of the grocery where the eggs are….comes in a can like whipping cream! Shake it up and makes pancakes or waffles……makes great fun shaped pancakes for young and old!!

PETER’S BEER WAFFLES
3 egg yolks
1 whole egg
1 1/2 c. (1 can) beer (notice 1/2 can left over? You decide)
2 c. flour
1 tbsp. baking powder
1 tsp. salt
Pinch of sugar
1/4 c. oil
Beat egg yolks and egg with beer until it fills a good sized bowl. Add flour, baking powder, salt, sugar, and oil. This will make a thin batter. Bake on hot waffle iron until steam stops.
